I need a great potatoe soup recipe?

made from scratch or at least has real potatoes in it not hashbrowns.I need a great potatoe soup recipe?
Crockpot Potato Soup





6 potatoes, peeled and thinly sliced


1 carrot, sliced


1 stalk celery sliced


4 chicken bouillon cubes


1 tablespoon parsley


5 cups water


1 tablespoon salt


pepper


鈪?cup butter


1 can evaporated milk (13 ounce can)





Put all ingredients in crockpot except milk. Cook on low for 10-12 hours. Stir in milk during last hour of cooking.I need a great potatoe soup recipe?
Potato Soup, Slow-Cooker





4 russet or baking potatoes, peeled, cut into small pieces


2 leeks, coarsely copped (white and light green only)


2 onions, coarsely chopped


3 ribs celery, coarsely copped


4 chicken bouillon cubes


1 (10 戮 oz) can Cream of Chicken Soup


1 (10 戮 oz) can Cream of Celery Soup


1 Tbsp. dry parsely flakes


4 cups water


1陆 tsp. kosher salt


2 Tbsp. butter


1 (12 oz) can evaporated milk


Garnish: chopped chives





1. Place all ingredients except evaporated milk and chives in slow cooker.


2. Cook on low 10 hours, or on high for 5 hours.


3. Stir in evaporated milk the last hour of cooking time.


4. Garnish each bowl of soup w/ fresh chives.

Potato Soup





5 medium potatoes, peeled and diced


1 small onion, chopped


1 stalk celery, chopped


2 teaspoons celery salt


1 teaspoon seasoned salt


1 teaspoon dried whole basil


1/4 teaspoon pepper


2 tablespoons parsley flakes


2 chicken-flavored bouillon cubes


4 cups water


4 slices bacon


2 tablespoons all-purpose flour


1 1/2 cups milk





Combine first 10 ingredients in a large Dutch oven; bring to a boil.


Cover, reduce heat, and simmer 20 minutes.





Cook bacon in a large skillet until crisp; remove bacon, reserving 3


tablespoons drippings in skillet. Crumble bacon and set aside.





Add flour to drippings in skillet; stir until smooth. Cook 2 minute,


stirring constantly. Gradually add milk; cook oven medium heat, stirring


constantly until thickened and bubbly. Gradually stir milk mixture into


potato mixture. Simmer, uncovered, 15 minutes. Sprinkle bacon on top of soup in bowls..... yummy! Yield: 2 quarts.

Ingredients:


6 cups water


3 to 4 large potatoes

Preparation:


Put about 6-8 cups of water in pot. Bring to a boil and add peeled 1'; chopped potatoes and salt. I used 3 BIG potatoes but you can adjust however many you want in your soup. I added; 1/2 cup chopped green onions,a little garlic, 1 1/2 cups of 1/2'; cubes of chopped ham, parsley, 1 cup corn, 1/2 cup chopped carrots, 1/2 stick of butter, 1/2 cup chopped celery, 1/2 red bell pepper, chopped, about 1 cup of tiny flowerets of fresh broccoli, 1 cup of ';Bear Creek'; Potato soup mix (from Sams). I let this simmer for about 30-40 minutes. Then I added 2 inches of Velveeta cheese in cubes and let it melt. This turned out wonderful, best we have ever eaten.

Drag-it Through-the-Garden Potato Soup





1 yellow onion, diced


陆 c. butter


8 potatoes, peeled %26amp; diced


enough water to cover potatoes in the pot


3 T. chicken bouillon


陆 c. flour


4 c. half %26amp; half or milk


1 T. parsley flakes


10 oz. frozen peas


3 or 4 strips of bacon, fried until crisp


salt %26amp; pepper to taste





Add, if desired, 1 cup of any or all of the following vegetables:


saut茅ed mushrooms


green beans


shredded carrots


shredded zucchini





Saut茅 onion in the butter until clear. Add potatoes and cover with water. Add bouillon and cook over medium high heat until potatoes are tender. Reduce heat. Combine flour and half of the milk or half %26amp; half in a jar and shake well to mix. Add to the potatoes and stir for 3-4 minutes, or until thickened. Gradually add remaining milk, stirring constantly to avoid scorching. Add remaining vegetables and seasonings. Gently heat through.


Garnish with crumbled, crisp bacon, if desired.

Chop the onions smaller the quicker, chop or smash the garlic toss into a soup pot with a small amount of your favorite cooking oil sweat cook without color, while this is cooking peel and dice the potatoes (again the smaller the quicker they'll cook) add chicken stock and potatoes to the pot cook over medium heat till potatoes are soft add cream bring back to a boil. in small batches puree in a blender till smooth add salt and pepper to taste you can serve hot or chill it and serve it cold

    6 small yams


    4 tbsp butter

    bake the potatos for about 45 min at 400F... cut them lengthwise and scoop out the flesh into a large sauce pan and discard the skins. add the butter, sugar, molasses, bourbon, salt, pepper, allspice, and nutmeg. mash until smooth and rewarm over low heat stirring often for 5 minutes.

    Old Fashioned Sweet Potato Pie





    2 1/2 c. mashed sweet potatoes


    1/2 c. butter


    1 1/4 c. sugar


    1 tbsp. flour


    1/2 tsp. salt


    1/2 tsp. nutmeg


    1/2 tsp. ginger


    1/2 tsp. cinnamon


    1/8 tsp. cloves


    2 eggs


    2 cans evaporated milk


    2/3 c. milk


    2 (9 inch) unbaked pie shells





    Combine sweet potatoes and butter, mix until well blended. Add sugar, flour and spices, mix well. Blend in eggs, and milks, mix well. Pour into pie shells. Bake at 425 degrees oven for 10 minutes. Reduce oven temperature to 350 degrees and cook for 1 hour.

    1 pound 3 ounces sweet potatoes, peeled and cubed


    1 1/4 cups plain yogurt


    3/4 cup packed, dark brown sugar


    1/2 teaspoon of cinnamon

    5 egg yolks


    Salt


    1 (9-inch) deep dish, frozen pie shell


    1 cup chopped pecans, toasted


    1 tablespoon maple syrup








    Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.


    Preheat the oven to 350 degrees F.





    Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Pour this batter into the pie shell and place onto a sheet pan. Sprinkle pecans on top and drizzle with maple syrup.





    Bake for 50 to 55 minutes or until the custard reaches 165 to 180 degrees. Remove from oven and cool. Keep refrigerated after cooling.
    Sweet Potato Pie





    1 1/2 lbs sweet potatoes, peeled and cut into 2 inch pieces


    2 large eggs


    1/3 cup plus another 1/2 cup packed brown sugar


    3 Tbsp maple syrup


    1/4 teaspoon salt


    1/2 teaspoon ground cinnamon


    1/4 teaspoon ground nutmeg


    3/4 cup plus 1 Tbsp heavy cream


    1 pre-baked pie crust (see pie crust recipe for instructions on pre-baking a pie crust


    3 Tbsp butter


    1 cup of pecans, half of them lightly chopped, the other half whole





    1 Make the pie crust. (See pie crust recipe for instructions on pre-baking a pie crust.) If you use a store-bought frozen crust, you do not need to pre-bake it, just defrost it 10 minutes and prick the bottom all over with a fork before using.





    2 Make the sweet potato pur茅e. In a large saucepan, cover the sweet potato pieces with water and bring to a boil. Simmer for 15 minutes or until the sweet potato pieces are soft when poked with a knife or fork. Drain. Pur茅e in a food processor until smooth. You may need to add back a little liquid (a tablespoon or two of water) to get a smooth consistency. Let cool completely before using.





    3 Prepare the pie. Preheat the oven to 375掳F. Place rack at bottom of oven. In a large bowl, whisk together the eggs, 1/3 cup brown sugar, and maple syrup until smooth. Add the sweet potato pur茅e, salt, cinnamon, nutmeg, and 3/4 cup of cream. Mix until completely smooth. Pour into cooled crust.





    4 Bake the pie. Bake on lowest rack for 50 minutes, until filling has set. You may want to tent the edges of the pie with aluminum foil or a pie crust protector to prevent the pie crust edges from burning. Cool on rack for one hour. Then transfer to refrigerator and chill completely.





    5 Make the pecan topping. Melt 3 Tbsp butter in a small saucepan over medium heat. Add 1/2 cup of brown sugar and cook, stirring, until smooth, about 3 minutes. Add 1 Tbsp cream, and mix in. Add the pecans, mix to coat the pecans with the sugar mixture. Let cool for 1 minute. Pour mixture over cooled pie. Use a rubber spatula to spread topping over the top of the pie. Cool until topping has hardened, about 30 minutes.





    Serves 8.

    Preheat the oven to 350潞F.





    For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.





    For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10-12 minutes, or until delicately browned. Cool and serve.

    me my husband and the kids love vedge fruit etc and wanted to try something new so we got some sweet potatoes and putting them in the fridge realised we had no idea what to cook them with or what they would go nice with does anyone have any ideas and can i put them in a stew or use them to top a cottage pie instead of traditional mash?Sweet potatoe recipe ideas?
    I am from the south, live in the south, and can attest that as many people who like sweet potatoes, you have just as many who do not. I love sweet potatoes, but my husband and kids do not.





    My favorite way to prepare them is simple: baked. After scrubbing well, dry and rub either shortening or bacon grease over the outside of each sweet potato. Prick with a sharp knife several times. Place in casserole and bake for 1 hour at 400 degrees.





    Once they are done, your potatoes will have a very crispy skin, and the inside will be moist and fluffy. Slice open and add butter. No brown sugar necessary -- they are already sweet, thus the name Sweet Potato.





    You can fry them like french fries. They will not get as firm and crispy as white potatoes, but they do taste good. Another way to prepare them is to slice into wedges, toss with olive oil, salt, pepper and roast in 400 degree oven for about 30 - 45 minutes. Other ways you can prepare Sweet Potatoes is as a pie filling. The taste and texture is similar to Pumpkin Pie. My grandmother used to candy her Sweet Potatoes, but she used a syrup that was poured over wedges and baked until the wedges were crisp -- no marshmallows. Also popular are Sweet Potato Pancakes, Sweet Potato soup, mashed Sweet Potatoes, Sweet Potato rolls, Sweet Potato cookies, Sweet Potato pudding (I am starting to sound like Bubba from Forrest Gump).

    Makes 2 pies.
    1) Take them out of the fridge. You are not supposed to put sweet potatoes in the fridge. Leave out on counter or in cupboard.





    2) Mashed sweet potatoes on top of Shepherd's Pie or Cottage Pie is SO GOOD. I'd take it over regular mashed. I think it is superb.





    3) They are also great diced up and boiled then added to a coconut curry sauce.





    4) They are also great cut into fries and baked in a hot oven, tossed in some light oil and coarse salt and pepper and dipped in HONEY.





    5) I love them baked (for about 40 mins on 375) and topped with a touch of brown sugar and butter and salt/pepper.





    SWEET POTATO MASHED





    2-4 Sweet Potatoes, peeled and diced


    3T butter


    Salt/Pepper


    2 T brown sugar


    Dash of milk or cream *optional





    Boil the potatoes until fork tender. Drain well and mash up. Then add butter, salt, pepper, sugar, and cream. Use a hand blender to get a smooth consistency like mashed potatoes.





    ENJOY!
    French Fries - Not!


    Cut up 2 or 3 potatoes into quarters, eighths, or French fry shapes. You can peel them if you wish, but remember that the peels have lots of nutrients.





    Put the cut-up potatoes in a bowl and toss them with melted butter. Use only about 1 teaspoon of melted butter for each potato. (Or save washing a big bowl and brush them with melted butter instead.)





    Spread potatoes on a cookie sheet sprayed with non-stick cooking spray. Bake in pre-heated 400 oven for 20 minutes or until browned.





    Variations: Sprinkle some Parmesan cheese and/or parsley on those fries before they go into the oven--delicious! Or use sweet potatoes instead of white potatoes for an extra jolt of vitamin A.
    If you use them in stew or cottage pie you'll likely first vomit, then throw them away. They're not like potatoes at all.





    Peel them and slice them 1/2 inch thick, cover with melted butter and bake them at 400 degrees for about 15-20 minutes. Remove from oven, sprinkle brown sugar on them, let cool for 5 minutes, and enjoy.





    Can also bake them whole for an hour, peel, mash them up, and use them like pumpking to make an awesome pie
    You can substitute them in anything that has mashed potatoes yes. One of my favorite things to do is to mash them with a little bit of butter and brown sugar and serve them on the side of a savory dish. This way, you get a sweet and savory meal. It's AMAZING!
    They are good roasted, just chop up and roast as you would a normal potato (no need to parboil). They are also good mashed, on their own or mixed with normal potatoes or carrots/parsnips. I think they are lovely when roasted with butternut squash, leeks, peppers and tomatoes and served with something like a good pork chop or a normal roasted meat joint. I also make a good vegetable curry with them.

    They are pretty good if you slice them up and deep fry them like potato chips or french fries.





    As a kid, I had them baked with a topping of brown sugar, but I never developed a taste for them that way, mostly because we were forced to eat them. ';It's good for you - shut up and eat it';.

    In a baking dish I place cubed sweet potato, onion halves, sliced mushrooms, carrots, a few herbs, drizzle with olive oil and roast - serve with chicken or fish - divine!

    4 pounds 4 large sweet potatoes, unpeeled and quartered


    - 1 large onion, chopped


    - 3 cups carrots, peeled and chopped


    - 1 cup celery stalks, chopped


    - 5 cups chicken broth


    - 1 tablespoon canola oil


    - 1/2 teaspoon dried oregano leaves


    - 1/2 teaspoon thyme leaves


    - 1 pinch freshly ground nutmeg, a few grinds


    - 1/2 teaspoon ground cumin


    salt and pepper to taste





    Directions


    Fill a 5 quart or similar-sized pot with enough water to cover the quartered sweet potatoes and add 1 teaspoon of salt to the water. Place unpeeled potatoes into the pot of boiling water on a low boil. Cook until tender. Drain potatoes and water from pot using a colander. When potato chunks have cooled, remove potato skins by hand.


    Using the same 5 quart pot, add oil, carrots, onions, and celery. Set burner on medium heat. Saut茅 ingredients until soft. Add broth and sweet potatoes. Bring to a full boil befor reducing heat; simmer for 40 minutes.


    Add seasonings while simmering. Before removing from heat, additonal seasonings, if needed, to taste. Add extra water or chicken broth, if the consistency is too thick. With an immersion blender or food processor, pur茅e until almost smooth.


    Reheat before serving.

    Sweet Potato Skillet Recipe





    4 sweet potatoes - approx. 2 lbs.


    - 4 tablespoons margarine


    - 1/8 teaspoon salt


    - 1 can crushed pineapple - 8 oz.


    - 2 tablespoons maple syrup





    Peel the sweet potatoes and then cut into 1/4'; slices. The sweet potatoes darken quickly so you want to slice them just before using. Placing them in a bowl of cold water will help stop the darkening.


    Melt the margarine in the bottom of a skillet over medium heat. Add the slice sweet potatoes.


    Cook until browned on one side. Turn and then cover and cook for 5 minutes, turning the heat down to low.


    Turn the potatoes and brown the other side over medium heat. Cover, turn heat on low, and cook for another 5 minutes or until the potatoes are tender. Do not overcook or the potatoes will become so soft.


    Sprinkle with salt, add the pineapple and maple syrup to the sweet potatoes. Cook over medium heat until everything is heated thoroughly.


    Serve immediately

    INGREDIENTS:


    1 cup mayonnaise


    2 tablespoons vinegar


    1 1/2 teaspoons salt


    1 teaspoon sugar


    5 to 5 med. potatoes, peeled, cubed, cooked

    1/2 cup chopped onion


    3 eggs, hard-boiled

    Old-Fashioned Sliced SweetPotato Pie





    Ingredients:





    pastry for a 9-inch double crust pie


    3 medium-size SweetPotatoes (about 2 1/4 pounds total)


    1/2 teaspoon salt


    1/2 cup granulated sugar


    1/3 cup firmly packed brown sugar


    2 tablespoons lemon juice


    2 tablespoons all-purpose flour


    1 tablespoon pumpkin pie spice


    1 tablespoon butter, cut into bits





    Preparation:





    Preheat oven to 425 degrees F. Line a 9-inch pie plate with 1 layer of pastry, set aside.





    Wash, peel and cut SweetPotatoes into 1/4-inch slices. Combine 1 cup of water and the salt into a large saucepan. Add SweetPotato slices. Cover and bring to a boil over high heat. Reduce heat and simmer until SweetPotatoes are just barely tender when pierced, about 5 minutes. Drain slices, then rinse them with cold water until they are cool to touch. Drain slices well, transfer them to a large mixing bowl.





    To SweetPotatoes, add sugars, lemon juice, flour and pumpkin pie spice. Toss gently with a spatula until slices are evenly coated. Spoon SweetPotatoes into pastry-lined pie plate, dot top of potatoes with butter. Place top pastry over filling and crimp top and bottom pastries together to make decorative edge.     My niece just told me that instead of boiling your potatoes, bake them for your pies. I also heard to use all spice in your pies. When you mix them in a mixer...always rinse the beaters off after mixing to get rid of the strings. Do that until you don't have any more strings.

    Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.

    2/3 box powdered sugar


    1 tsp. vanilla flavoring

    My friend makes this really yummy potatoe salad. It's potatoes, kidney beans, pickles, mayo and some dill (or no dill if you dont like it). So you would boil the potates, chop them into chunks, let them cool. Then mix in kidney beans, chopped up pickles (the little sweet ones work well) and mayo. Throw in some dill if you like.





    Some people put eggs in there potatoe salad too.
    Just chop up some onions, bell pepper, colour of your choir lay aside....... chop up the potatoes in cubes......boil it maybe for 5 min or less not too soft....when cook run through cool water......then put all ingredients in, season to taste add a little sugar , salt, pepper, mayonnaise, evaporated milk, if you like put some hard boil eggs in and mix well.

    My grandma makes this very simple, totally delicious potato salad. It's mainly for people who don't like onions and celery ana all that in their potato salad.





    All you need is about 5-10lbs of potatoes, depending on how much you want, (and DO NOT use red potatoes, they do not boil well) and one cucumber for 5 lbs, 2 cucumbers for 10 lbs. Salt, pepper, Mayonnaise and Bacon.





    Boil the potatoes. While the potatoes are boiling, fry the bacon. Make sure it is cooked well as it will need to be crispy. Let the potatoes cool COMPLETELY, then peel them. Cut the potatoes into squares. Then, cute the cucumber into quarters, and add to the potatoes. Then add about 1 jar of mayonnaise for 5 lbs, and about 1 1/2 jars for 10 lbs. You should be able to tell how much mayo to put in. Mix well with the potatoes and cucumber. Add Salt, Pepper, and Bacon, and mix well. Add salt and pepper to taste.

    I am not sure these will help, but for sure this is a power vegetable, full of cancer-fighting phytochemicals as well as lots of vitamin C and folate and plenty of vitamin B6 and potassium.





    Whole Baked Cauliflower with Yogurt-Chive Sauce


    Prep: 10 min / Cook:35 min





    1/2 cup plain low-fat yogurt


    1/4 cup loosely packed minced fresh chives


    11/2 tbsp Dijon mustard


    1 head caoliflower


    2 tsp olive oil


    1 large shallot, minced


    1/4 tsp dried oregano, crumbled


    11/4 cups fresh bread crumbs





    1. In blender or food processor, puree yogurt, chives, and mustard to make sauce. If making sauce ahead, refrigerate.





    2. Preheat oven to 350 deg F.





    3. Trim leaves from base of cauliflower. Remove hard bottom stem, keeping remaining cauliflower whole. In large pot of lightly salted boiling water, cook cauliflower, fully submerged, until barely crisp-tender, about 6 minutes. Drain. Let cool slightly.





    4. Heat oil in medium nonstick skillet over medium heat. Add shallot and oregano. Saute 2 minutes. Stir in bread crumbs, mixing well to coat with oil and seasoning. Cook, stirring, until lightly browned, about 2 minutes.





    5. If nessessary, slightly level top of cauliflower so it can stand inverted in small baking dish. Place cauliflower, stem end up, in dish. Fill hollow of stem with crumb mixture.





    6. Bake until bread crumbs are golden and cauliflower is fork-tender, 20 to 25 minutes. Serve with sauce.





    Per serving: 83 cal, 4 g protein, 12 g carbohydrates, 3 g fat, 3 g fiber, 1 mg cholesterol.

    Salt and Pepper to taste


    3 hard-cooked eggs, chopped

    Dressing:

    Directions:

    1 tablespoon pumpkin pie spice


    1 tablespoon butter, cut into bits





    Preparation:





    Preheat oven to 425 degrees F. Line a 9-inch pie plate with 1 layer of pastry, set aside.





    Wash, peel and cut SweetPotatoes into 1/4-inch slices. Combine 1 cup of water and the salt into a large saucepan. Add SweetPotato slices. Cover and bring to a boil over high heat. Reduce heat and simmer until SweetPotatoes are just barely tender when pierced, about 5 minutes. Drain slices, then rinse them with cold water until they are cool to touch. Drain slices well, transfer them to a large mixing bowl.





    To SweetPotatoes, add sugars, lemon juice, flour and pumpkin pie spice. Toss gently with a spatula until slices are evenly coated. Spoon SweetPotatoes into pastry-lined pie plate, dot top of potatoes with butter. Place top pastry over filling and crimp top and bottom pastries together to make decorative edge. Cut 3 to 4 slits in the top to allow steam to escape.





    Bake in 425 degrees F. oven until crust is browned and SweetPotatoes are tender when pierced, about 50 minutes. (If edges of crust start to brown too quickly, drape lightly with strips of foil. Cool pie on wire rack at least 1 hour. Serve warm or cool.Sweet potatoe pie recipe...?

    My niece just told me that instead of boiling your potatoes, bake them for your pies. I also heard to use all spice in your pies. When you mix them in a mixer...always rinse the beaters off after mixing to get rid of the strings. Do that until you don't have any more strings.

    1 (9-inch) deep dish, frozen pie shell

    Special equipment: steamer basket








    Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.


    Preheat the oven to 350 degrees F.





    Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Pour this batter into the pie shell and place onto a sheet pan. Sprinkle pecans on top and drizzle with maple syrup.

    2/3 box powdered sugar


    1 tsp. vanilla flavoring





    Mix together, if too thin add extra sugar, if too thick add few drops milk.

    My friend makes this really yummy potatoe salad. It's potatoes, kidney beans, pickles, mayo and some dill (or no dill if you dont like it). So you would boil the potates, chop them into chunks, let them cool. Then mix in kidney beans, chopped up pickles (the little sweet ones work well) and mayo. Throw in some dill if you like.





    Some people put eggs in there potatoe salad too.
    Just chop up some onions, bell pepper, colour of your choir lay aside....... chop up the potatoes in cubes......boil it maybe for 5 min or less not too soft....when cook run through cool water......then put all ingredients in, season to taste add a little sugar , salt, pepper, mayonnaise, evaporated milk, if you like put some hard boil eggs in and mix well.

    My grandma makes this very simple, totally delicious potato salad. It's mainly for people who don't like onions and celery ana all that in their potato salad.





    All you need is about 5-10lbs of potatoes, depending on how much you want, (and DO NOT use red potatoes, they do not boil well) and one cucumber for 5 lbs, 2 cucumbers for 10 lbs. Salt, pepper, Mayonnaise and Bacon.





    Boil the potatoes. While the potatoes are boiling, fry the bacon. Make sure it is cooked well as it will need to be crispy. Let the potatoes cool COMPLETELY, then peel them. Cut the potatoes into squares. Then, cute the cucumber into quarters, and add to the potatoes. Then add about 1 jar of mayonnaise for 5 lbs, and about 1 1/2 jars for 10 lbs. You should be able to tell how much mayo to put in. Mix well with the potatoes and cucumber. Add Salt, Pepper, and Bacon, and mix well. Add salt and pepper to taste.

    I am not sure these will help, but for sure this is a power vegetable, full of cancer-fighting phytochemicals as well as lots of vitamin C and folate and plenty of vitamin B6 and potassium.





    Whole Baked Cauliflower with Yogurt-Chive Sauce


    Prep: 10 min / Cook:35 min





    1/2 cup plain low-fat yogurt


    1/4 cup loosely packed minced fresh chives


    11/2 tbsp Dijon mustard


    1 head caoliflower


    2 tsp olive oil


    1 large shallot, minced


    1/4 tsp dried oregano, crumbled


    11/4 cups fresh bread crumbs





    1. In blender or food processor, puree yogurt, chives, and mustard to make sauce. If making sauce ahead, refrigerate.





    2. Preheat oven to 350 deg F.





    3. Trim leaves from base of cauliflower. Remove hard bottom stem, keeping remaining cauliflower whole. In large pot of lightly salted boiling water, cook cauliflower, fully submerged, until barely crisp-tender, about 6 minutes. Drain. Let cool slightly.





    4. Heat oil in medium nonstick skillet over medium heat. Add shallot and oregano. Saute 2 minutes. Stir in bread crumbs, mixing well to coat with oil and seasoning. Cook, stirring, until lightly browned, about 2 minutes.





    5. If nessessary, slightly level top of cauliflower so it can stand inverted in small baking dish. Place cauliflower, stem end up, in dish. Fill hollow of stem with crumb mixture.





    6. Bake until bread crumbs are golden and cauliflower is fork-tender, 20 to 25 minutes. Serve with sauce.





    Per serving: 83 cal, 4 g protein, 12 g carbohydrates, 3 g fat, 3 g fiber, 1 mg cholesterol.

    Shred a leek and a large carrot. Fry in hot sesame oil. Add a little crushed fresh ginger.Add a packet of cooked noodles of your choice.Stir fry until warmed through.





    Then add soy sauce, rice wine vinegar, a little more sesame oil, to season.





    Finish with some crushed, toasted peanuts, a lime or lemon wedge and a few chilli flakes. Very easy and very yummy - when the shredded leeks hit the hot sesame oil they reach a new dimension of toasty yumminess!





    You could also add crushed garlic and fresh chillies at the first frying stage, if you want a little more flavour and zing. Just be sure not to burn the garlic, and be careful of getting chilli in your eyes (as I ALWAYS do.) Also, a few cubes of tofu at the first stage turn this into more of a meal rather than a snack.

    I would make a lovely creamy leek risotto - here's a good recipe.





    Ingredients


    25g butter


    1 tbsp olive oil


    4 spring onions , trimmed and finely chopped


    2 garlic cloves , sliced


    150g arborio rice


    glass white wine


    750ml vegetable or chicken stock


    25g parmesan , finely grated





    Method


    Bring the stock to a simmer. Heat a large wide pan and add half the butter and the olive oil. Add the spring onions, leeks and garlic and cook for 5 minutes until softened. Add the rice and stir to coat then tip in the wine and bubble until reduced. Add the stock a little at a time, stirring until the rice is tender with a little bite and oozy.


    Stir in the parmesan and the rest of butter and season.

    Leeks Gratin -





    Ingredients


    4 medium leeks


    60 g cheese, grated


    White Sauce:


    300 ml milk


    30 g butter


    30 g plain flour


    1 tsp mustard


    1 clove garlic, crushed


    1 pinch nutmeg, ground





    Method


    Cut leeks into small pieces and steam or boil leeks until tender, 7-9 minutes.





    Put all ingredients for the white sauce in a pan and heat gently, stirring occasionally until sauce thickens for approximately 10 minutes. Liquidize in a blender.





    Place in an oven proof dish and pour over white sauce to cover the leeks.





    Bake in an oven for approximately 20-30 minutes. Sprinkle with cheese during the last 5 minutes of baking.

    2 tblsp chopped hazelnuts





    Preheat oven to 200 C/400 F/Gas Mark 6.


    In a bowl, toss the leeks with the oil and place in a large roasting tin with the stock. bake in the oven for 15 minutes.


    Dot leeks with butter, cheese and nuts, put back in oven and cook for a further 15-20 minutes until leeks are tender and cheese has melted.





    Balsamic braised leeks and peppers:





    1 1/2 tblsp olive oil


    2 leeks cut into 1 cm pieces


    1 orange and one red pepper, deseeded and cut into 1 cm chunks


    3 tblsp balsamic vinegar


    1 handful chopped parsley





    Heat oil in a saucepan (it definitely says saucepan, not frying pan), cook leeks and peppers very gently, covered, for about 10 minutes.


    Add vinegar and cook for a further 10 mintes without a lid. The vegetablkes should be brown in the vinegar and all the liquid should have evaporated.


    Stir in parsley.

    CREAMY LEEK %26amp; MUSHROOM PASTA;





    60g/2oz penne pasta


    110g/4oz leeks sliced and rinsed


    a little oil


    seasoning


    110g/4oz mushrooms chopped roughly


    1 garlic clove crushed


    1 tsp thyme freshly chopped


    40g/1 and a half oz low fat soft cheese





    1. Tip the penne into a pan of boiling water and cook for 10-12 minutes until tender.


    2. Meanwhile, pour the oil into a non stick saucepan and add the leeks, season and 2 tablespoon water, cover the pan and cook for 3 minutes.


    3. Add the mushrooms, garlic, and thyme to the leeks, re-cover the pan and cook for 5 minutes. Stir the low fat soft cheese into the juices to make a creamy sauce.


    4. Drain the pasta and toss together with the sauce.


    Serve in a warmed bowl.





    LEEK %26amp; BUTTER BEAN CRUMBLE;





    a little oil


    250g/9oz leeks trimmed, rinsed and sliced


    seasoning


    150ml/5 fl oz veg stock


    1 medium slice bread white or wholemeal


    40g/1 and a half oz mature cheese grated


    1 x 410g can butter beans rinsed and drained


    2 tsps grain mustard





    1. Preheat the oven to gas mark 5/190C/fan oven 170C/375F


    2. Add the oil to a non stick cooking pan, add the leeks and seasoning and toss to coat. Add 3 tablespoons of the stock, cover the pan and cook for 4 minutes until tender


    3. In the meantime, roughly tear up the bread and whiz to crumbs in a food processor, or use a hand blender. Mix with grated cheese


    4. Add the drained butter beans, mustard and remaining stock to the leeks, season and stir to mix then tip into a baking dish. Cover with the cheesy crumbs and mist with a little oil. Bake for 15 minutes until crisp, golden and bubbling









    You could make mock 'chicken' soup, that is, if you eat Quorn.


    Or, you could just use tofu.





    All you need are leeks, carrots, rice (or pasta), corn and some Quorn (or tofu). Use vegetable stock cubes to make a broth, cook your veggies and ta-da, you have soup.





    It's actually really tasty, even though it's dead simple. You can add as many veggies as you want. Oh and it's extra nice if you have some fresh, crusty bread with it.
    Try a leek, rocket and basil quiche - delicious.


    Just fry some chopped leeks, 2 cloves of crushed garlic until tender. Add rocket leaves and a few shredded basil leaves, cook a further 2 mins. Leave to cool. Place into a pre-cooked quiche puff pastry pastry shell. Add the quiche mixture on top (4 eggs, 1 cup milk, 1 cup cream, plus salt %26amp; pepper, all whisked together). Sprinkle with a little grated cheese. Bake at 180 degrees C for 50 minutes.
    Try this delicious recipe! Peel 4 potatoes and boil them until soft, in a separate pan- fry some leeks with a bit of butter and some balsamic vinegar, once they have browned off, add leeks to the potato, mash together, then put some vine tomatoes on top and shave some cheddar cheese, shove until the Grill for 2 Min's, there you have it, bloody gorgeous!! ;)
    well there is a broth we have in wales which is not vegetarian called cawl with just as much different veg as possible in there with lamb beef pork or even chicken. however there is no reason why u can't just make this with vegetables including leek with a bread roll and a dollope of goats cheese yummy.


    All u need to do is boil the veg in water ,add salt and pepper even better just some oxo cubes add a generous helping of mustard ,brown sauce and soya sauce in with this and boil till the veg is nice and soft.This tho would not be suitable for a person on a low salt diet i don't think unless it was in small portions. Try it u might like it. : ))
    I love leeks in soup. For some reason they just seem right in broth. But I agree that potato soup is old, and have several other recipes for soup that take a leek.





    My favorite is called ';Your In Soup.';





    You make a nice savory vegetable broth, with a little cumin and cardomom to give it a bit of an east indian flavor.





    Just before serving, you take a leek in it. Your guests will be so surprised.
    Try a vegetarian version of Welsh Flan





    Short crust pastry base, cover with a layer of cooked and thickened soya/quorn mince, then put on a layer of cooked finely sliced leeks and top with a layer of cheese sauce. Bake in oven until pastry is cooked

    slice leeks and mix into almost cooked pasta


    place in an ovenproof dish


    cover with cheese sauce


    sprinkle grated cheddar and parmesan on top

    BEEF, HAM AND LEEK SOUP





    Ingredients:





    1 pound lean stewing beef, cut in 1/2-inch pieces


    1 beef soup bone


    1 joint ham


    3 cups water


    2 cups beef broth


    2 cans (14.5 ounces each) tomatoes


    2 cups diced potatoes


    2 cups diced carrots


    1 cup diced celery


    1 cup diced turnip


    1/2 cup chopped onion


    1/4 cup pearl barley


    4 whole cloves


    1 bay leaf


    1 teaspoon sugar


    a leek or two


    salt and pepper, to taste





    Preparation:





    Place all ingredients in a deep soup pot; cover. Bring to a boil. Reduce heat; cover and simmer for 1 1/2 to 2 hours, or until meat is tender. Remove bone. Chill overnight. Skim off fat, reheat, and serve. Chuck a couple of leeks in to shut those limpwristed vegetarian pansies up. Makes about 4 quarts of beef, ham and leek soup.

    This is a 5 star recipe, and looked mighty yummy to me..maybe it was the maple topping that got me..(I saw it on an episode of ';Down Home with the Neely's)...





    ***Calley's Sweet Potato Pie***








    4 medium sweet potatoes


    1/2 stick butter, softened


    1/4 cup sugar


    3/4 cups brown sugar


    2 eggs, beaten


    1 teaspoon pure vanilla extract


    1/2 teaspoon ground cinnamon


    1/8 teaspoon ground ginger


    1/8 teaspoon ground nutmeg


    1/8 teaspoon ground allspice


    1/2 teaspoon salt


    3/4 cup evaporated milk


    1 unbaked pie crust


    Maple whipped cream, optional, recipe follows





    Preheat oven to 350 degree F.


    Bake sweet potatoes for 1 hour in the oven on a baking sheet. When done, let cool. Peel the pulp out of the skin. Place in pot and mash. Set aside.





    In a medium bowl, beat together butter, sugar and brown sugar until creamy. Add eggs, vanilla, cinnamon, ginger, nutmeg, allspice and salt. Add evaporated milk and stir into sweet potatoes. Beat together with mixer until smooth. Pour mixture in unbaked pie shell.





    Bake on bottom rack of oven for 1 hour or until center of pie is firm. Serve warm. Add dollop of whipped cream if desired.








    Maple Whipped Topping:


    1 cup heavy whipping cream


    1/4 confectioners' sugar


    2 tablespoons maple syrup

    Some large marshmallows


    Graham Cracker Crumbs


    METHOD


    Preheat oven to 350 degrees. Drain and mash canned yams.


    Mix in all other ingredients


    Mix the pineapple juice in to your liking; and when satisfied pour the mixture into baking dish.


    Take graham cracker cumbs and sprinkle them in the middle.


    Bake uncovered for about 30 minutes.


    Cool and serve with pecans, whipped cream, dream whip or your choice of favorite topping.

    SWEET POTATO PIE


    2- 21/2 cups sweet potatoes (cooked and mashed or canned)


    1 1/2 cups sugar


    1 stick butter


    2 eggs, beaten


    1 tsp cinnamon

    1 tsp vanilla


    1/4-1/3 cup milk (according to amount of sweet potatoes)


    1 PIE SHELL UNBAKED


    METHOD


    Mix all ingredients together and pour into unbaked pie shell.


    BAKE 325 degrees for 45-50 minutes.

    Preheat oven to 350潞F. Beat together sugar and eggs. Add potatoes, vanilla, and melted butter. Mix, then add milk. Pour into unbaked pie shell and bake for 1 hour.

    1 tsp. allspice


    1/2 tsp. salt


    1 can (13 oz.) evaporated milk, heated until very hot


    1 (9';) pie shell, unbaked


    Pecan halves %26amp; whipped cream (optional)





    In a large mixing bowl, beat together eggs, sweet potatoes, sugar, spices and salt. Gradually stir in milk. Pour into pie shell. Bake on bottom rack of preheated 400 degree oven until knife inserted near center comes out clean, about 40-50 minutes. Cool completely on wire rack. Garnish with pecans and whipped cream, if desired.

    1 15 oz. can Libby鈥檚 pumpkin pie filling


    1 15 oz. can candied yams


    1/2 cup light brown sugar


    1 teaspoon pumpkin pie spice


    1/2 teaspoon salt


    1/2 cup coconut milk


    2 tablespoon melted butter


    2 large eggs


    1 refrigerated pie crust


    3 tablespoon Myer's Rum





    Preheat oven to 350掳F.





    In the bowl of a food processor, combine pumpkin pie filling, candied yams (undrained), sugar, spice, salt, coconut milk, butter and eggs and process until smooth.





    Fill a 10-inch pie crust with the mixture.





    Bake for 1 1/2 hours.





    Remove from the oven and set aside for at least 20 minutes before serving. Better when chilled.

    I like them just boiled and mashed up with a little brown sugar and some cinnamon and butter, then dumped into a pie crust and topped with mini marshmallows and baked until the pie crust is done and the marshmallows are golden brown! Yummy!
