Gotcha- Easy. This one uses 4 cups mashed- you might need 2 cans.

Sweet Potato Pie

4 eggs

1 (12 ounce) can evaporated milk

1 1/4 cups sugar

3/4 cup butter or margarine, melted

2 teaspoons ground cinnamon

2 teaspoons pumpkin pie spice

1 teaspoon vanilla extract

1 teaspoon lemon extract

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

4 cups mashed canned or cooked sweet potatoes

2 (9 inch) unbaked pastry shells

Whipped cream

In a mixing bowl, combine first 10 ingredients; mix well. Beat in sweet potatoes. Pour into pie shells. Bake at 425 degrees F for 15 minutes.

Reduce heat to 350 degrees F; bake 30-35 minutes longer or until a knife inserted near the center comes out clean.

Cool completely. Serve with whipped cream if desired. Store in the refrigerator.I need a recipe for Sweet Potatoe Pie using Canned Sweet Potatoes?
usually my granmoe makes them from scratch but she did sum diffrent dis year and bought canned sweet potatoes and she just followed the directions on the can they should be there
I've never heard of that one but I bet the Iron chef's on Food Network Canada could put something like that together for you! Those chefs are amazing! I could suggest several other ideas instead:

1) Use a potato peeler and shave the skins off first. Next, continue shaving the yams and dip them in flour and sugar and deep fry them in vegetable oil mixed with syrup- it causes the shavings to curl up and form into a nice artistic curly presentation to decorate your plate with some other deserts or dinners, and it's sweet and crunchy like potato chips.

2) Peel your yams and boil them for 20 minutes. Next, drain the water and place them into a casserole dish and fill with syrup, brown sugar, and water, just enough to almost cover the tops of your yams. Bake them in the oven for several hours at 300 degrees Fahrenheit. Add more sugar until your reach the desired sweetness that you prefer.
