me my husband and the kids love vedge fruit etc and wanted to try something new so we got some sweet potatoes and putting them in the fridge realised we had no idea what to cook them with or what they would go nice with does anyone have any ideas and can i put them in a stew or use them to top a cottage pie instead of traditional mash?Sweet potatoe recipe ideas?
I am from the south, live in the south, and can attest that as many people who like sweet potatoes, you have just as many who do not. I love sweet potatoes, but my husband and kids do not.
My favorite way to prepare them is simple: baked. After scrubbing well, dry and rub either shortening or bacon grease over the outside of each sweet potato. Prick with a sharp knife several times. Place in casserole and bake for 1 hour at 400 degrees.
Once they are done, your potatoes will have a very crispy skin, and the inside will be moist and fluffy. Slice open and add butter. No brown sugar necessary -- they are already sweet, thus the name Sweet Potato.
You can fry them like french fries. They will not get as firm and crispy as white potatoes, but they do taste good. Another way to prepare them is to slice into wedges, toss with olive oil, salt, pepper and roast in 400 degree oven for about 30 - 45 minutes. Other ways you can prepare Sweet Potatoes is as a pie filling. The taste and texture is similar to Pumpkin Pie. My grandmother used to candy her Sweet Potatoes, but she used a syrup that was poured over wedges and baked until the wedges were crisp -- no marshmallows. Also popular are Sweet Potato Pancakes, Sweet Potato soup, mashed Sweet Potatoes, Sweet Potato rolls, Sweet Potato cookies, Sweet Potato pudding (I am starting to sound like Bubba from Forrest Gump).

This is my great grandmothers recipe its been in my family for 104 years now. Its been a secret but I felt compelled to give and share it with everyone. Mother will kill me if she ever finds out oops.
Sweet potatoes are cooked in the skillet with brown sugar and butter, along with other seasonings.
Cook Time: 15 minutes
Ingredients:
1/2 cup brown sugar
1/3 cup water
1 tablespoon butter
1/4 teaspoon salt
3 medium sweet potatoes, cooked, peeled, and sliced
Preparation:
In a heavy skillet, combine brown sugar, water, butter, and salt. Simmer for 5 minutes. Add sliced sweet potatoes. Simmer for 10 minutes, turning frequently.
Serves 4.
A sweet potato pie recipe, made with butter and sweet potatoes, along with vanilla and cinnamon.
Ingredients:
* 4 ounces butter, softened
* 2 cups cooked and mashed sweet potatoes
* 2 cups granulated sugar
* 1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
* 1 teaspoon vanilla
* 3 eggs, beaten
* 1 1/2 teaspoons cinnamon
* 2 prepared pie shells, unbaked
Preparation:
Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350掳 oven for about 1 hour, until set.
Makes 2 pies.
1) Take them out of the fridge. You are not supposed to put sweet potatoes in the fridge. Leave out on counter or in cupboard.
2) Mashed sweet potatoes on top of Shepherd's Pie or Cottage Pie is SO GOOD. I'd take it over regular mashed. I think it is superb.
3) They are also great diced up and boiled then added to a coconut curry sauce.
4) They are also great cut into fries and baked in a hot oven, tossed in some light oil and coarse salt and pepper and dipped in HONEY.
5) I love them baked (for about 40 mins on 375) and topped with a touch of brown sugar and butter and salt/pepper.
SWEET POTATO MASHED
2-4 Sweet Potatoes, peeled and diced
3T butter
Salt/Pepper
2 T brown sugar
Dash of milk or cream *optional
Boil the potatoes until fork tender. Drain well and mash up. Then add butter, salt, pepper, sugar, and cream. Use a hand blender to get a smooth consistency like mashed potatoes.
ENJOY!
French Fries - Not!
Cut up 2 or 3 potatoes into quarters, eighths, or French fry shapes. You can peel them if you wish, but remember that the peels have lots of nutrients.
Put the cut-up potatoes in a bowl and toss them with melted butter. Use only about 1 teaspoon of melted butter for each potato. (Or save washing a big bowl and brush them with melted butter instead.)
Spread potatoes on a cookie sheet sprayed with non-stick cooking spray. Bake in pre-heated 400 oven for 20 minutes or until browned.
Variations: Sprinkle some Parmesan cheese and/or parsley on those fries before they go into the oven--delicious! Or use sweet potatoes instead of white potatoes for an extra jolt of vitamin A.
If you use them in stew or cottage pie you'll likely first vomit, then throw them away. They're not like potatoes at all.
Peel them and slice them 1/2 inch thick, cover with melted butter and bake them at 400 degrees for about 15-20 minutes. Remove from oven, sprinkle brown sugar on them, let cool for 5 minutes, and enjoy.
Can also bake them whole for an hour, peel, mash them up, and use them like pumpking to make an awesome pie
You can substitute them in anything that has mashed potatoes yes. One of my favorite things to do is to mash them with a little bit of butter and brown sugar and serve them on the side of a savory dish. This way, you get a sweet and savory meal. It's AMAZING!
They are good roasted, just chop up and roast as you would a normal potato (no need to parboil). They are also good mashed, on their own or mixed with normal potatoes or carrots/parsnips. I think they are lovely when roasted with butternut squash, leeks, peppers and tomatoes and served with something like a good pork chop or a normal roasted meat joint. I also make a good vegetable curry with them.

add other vegetables if you like such as Onion, parsnips, courgettes, Tomatoes. (I recomment a mix of colors and tastes).
A few drops of olive oil on top, salt and pepper.
Roast them for 45 min at 180 deg and serve with any meat, fish or even an omelette.
They are pretty good if you slice them up and deep fry them like potato chips or french fries.
As a kid, I had them baked with a topping of brown sugar, but I never developed a taste for them that way, mostly because we were forced to eat them. ';It's good for you - shut up and eat it';.

In a baking dish I place cubed sweet potato, onion halves, sliced mushrooms, carrots, a few herbs, drizzle with olive oil and roast - serve with chicken or fish - divine!
Use like a standard potato, they're great roasted, baked like a jacket potato, in a stew or even as mash. Just plain boiled works too.

or cut into small chuncky pieces and boil in water with Rock Sugar (from oriental grocer) and a few slices of ginger. My Chinese friends serve this as a dessert. (again, YUM)

Sweet Potato Soup Recipe
4 pounds 4 large sweet potatoes, unpeeled and quartered
- 1 large onion, chopped
- 3 cups carrots, peeled and chopped
- 1 cup celery stalks, chopped
- 5 cups chicken broth
- 1 tablespoon canola oil
- 1/2 teaspoon dried oregano leaves
- 1/2 teaspoon thyme leaves
- 1 pinch freshly ground nutmeg, a few grinds
- 1/2 teaspoon ground cumin
salt and pepper to taste
Directions
Fill a 5 quart or similar-sized pot with enough water to cover the quartered sweet potatoes and add 1 teaspoon of salt to the water. Place unpeeled potatoes into the pot of boiling water on a low boil. Cook until tender. Drain potatoes and water from pot using a colander. When potato chunks have cooled, remove potato skins by hand.
Using the same 5 quart pot, add oil, carrots, onions, and celery. Set burner on medium heat. Saut茅 ingredients until soft. Add broth and sweet potatoes. Bring to a full boil befor reducing heat; simmer for 40 minutes.
Add seasonings while simmering. Before removing from heat, additonal seasonings, if needed, to taste. Add extra water or chicken broth, if the consistency is too thick. With an immersion blender or food processor, pur茅e until almost smooth.
Reheat before serving.

Sweet Potato Skillet Recipe
4 sweet potatoes - approx. 2 lbs.
- 4 tablespoons margarine
- 1/8 teaspoon salt
- 1 can crushed pineapple - 8 oz.
- 2 tablespoons maple syrup
Peel the sweet potatoes and then cut into 1/4'; slices. The sweet potatoes darken quickly so you want to slice them just before using. Placing them in a bowl of cold water will help stop the darkening.
Melt the margarine in the bottom of a skillet over medium heat. Add the slice sweet potatoes.
Cook until browned on one side. Turn and then cover and cook for 5 minutes, turning the heat down to low.
Turn the potatoes and brown the other side over medium heat. Cover, turn heat on low, and cook for another 5 minutes or until the potatoes are tender. Do not overcook or the potatoes will become so soft.
Sprinkle with salt, add the pineapple and maple syrup to the sweet potatoes. Cook over medium heat until everything is heated thoroughly.
Serve immediately
Cook them.
