Sweet Potatoe Pie Recipe?

large can of yams, drained (Sweet Potatoes)





录 can of sweetened condensed milk





2 tablespoons of brown sugar





陆 cup of raisins (Optional)





2 frozen pie shells











Preheat oven to 325 degrees








Thaw out the pie shells, then set them in the oven to cook empty just until they are lightly brown, then remove the pie shells from the oven and set them aside.





Drain the can of yams and place them in a large bowl.





Cut and smash the yams and then add the 录 can of sweetened condensed milk and the brown sugar.





Mix by hand or use an electric mixer to blend until smooth and creamy.





If using raisins fold them into the mixture by hand at this time.





Pour the mixture into the pie shells.





Bake at 325 degrees for approximately 10 minutes. Do not allow the pies to get too dark.

Sweet Potatoe Pie:


9 inch pie shell of your choice


( l often use a cookie crust )


2 cups cooked mashed sweet potates( large size =4)


1 1/2 cups evaporated milk


1/2 cup brown sugar


1/2 cup white sugar


2 beaten eggs


1/2 tsp. salt


1 tsp. cinnamon


1/2 tsp. ginger


1/2 tsp. allspice


1/8 tsp. cloves


Blend all ingredients till smooth and place in unbaked pie shell.


Bake pie at 425 for 15 minutes. Lower heat to 350 and bake


for 45 minutes till knife comes out of centre clean. Cool to


room temperature and serve with ice cream or caramel syrup

sweet patato pie caribbean style.You will need 3 medium sized sweet patatoes, 1/2 cup milk,2 tbs butter, groundspice, can pineapple slices, cinnamon, marschino cherries and sugar (optional).





1. peel and dice sweet patatoes


2. cook until tender, strain and mash


3. add milk, butter, groundspice,juice from pineapple


4. mix until nice and creamy


4. place in a baking dish top with pineapple slices and decorate


with cherries sprinkle with cinnamon and bake at 350.
Sweet Potato Pie with Hazelnut Streusel:





1 (9-inch) Graham Cracker Piecrust





Filling:


1 1/2 cups mashed cooked sweet potato (about 3/4 pound)


2/3 cup granulated sugar


1/2 cup evaporated fat-free milk


2 teaspoons vanilla extract


1/2 teaspoon ground nutmeg


1/4 teaspoon salt


1/4 teaspoon ground mace


3 large eggs





Streusel:


1/4 cup hazelnuts


1/4 cup all-purpose flour


1/4 cup packed dark brown sugar


3/4 teaspoon ground cinnamon


2 tablespoons chilled butter or stick margarine, cut into small pieces





Prepare and bake Graham Cracker Piecrust in a 9-inch pie plate, and cool on a wire rack.





Preheat oven to 350掳.





To prepare filling, combine the sweet potato and the next 7 ingredients (sweet potato through eggs) in a food processor; process until smooth. Scrape sides of bowl once. Pour mixture into prepared crust.





To prepare streusel, place hazelnuts on a baking sheet. Bake at 350掳 for 15 minutes, stirring once. Turn nuts out onto a towel. Roll up towel; rub off skins. Chop nuts. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, brown sugar, and cinnamon in a bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Stir in hazelnuts. Sprinkle filling with streusel. Bake pie at 350掳 for 45 minutes or until set. Cool on a wire rack.





Yield: 10 servings (serving size: 1 wedge)
