This is not from the book, but here is what I do:
4 medium sized potatoes (pealed and cut up of course)
3-4 tablespoons of flour
2 eggs
salt %26amp; pepper to taste
After peeling and cutting up the potatoes, put half of them with all the other ingredients into a food processor or blender. After mixing for about a minute, add the other half of the potatoes and mix until it is batter-like.
Heat up frying pan with oil in it, then when it is hot enough use a large spoon to put spoonfuls of batter into oil, brown on both side sides.
I hope I was clear enough, I usually just do it all by visual.
