Bake a whole potato. Top with chilli, chilli sauce, guacamole, salsa, sour cream and shredded cheese.

The best baked potato I ever had was a pulled pork baked potato. I know you said no meat, but I feel it need mention. It was one of the best things I have ever eaten, hands down.

OK, I'm Back. So you want wicked good baked potatoes?...
Take your potatoes and wash and scrub them real well. Then microwave them (depending on size and number) first for 5 minutes, then a couple of minutes at a time, until you can insert a knife into them easily. Don't over bake because the potatoes will end up like leather.
Then slice them into thick coins.
Get a pan hot on your stove. Add a few spoons of oil to the pan and arrange the potato rounds in there.
Fry these babies in that oil over medium high then medium heat until golden, turnr and do the same. As you turn salt them and add garlic powder if you have any. (seasoned salt also works well).
These twice baked potatoes are incredible. Crisp and golden on the outside and moist and fluffy on the inside.
Serve them with a side of guacemole, sour cream, chopped green onions and cheese. Bon appetit! ;o)

This is a great simple one. Go to Food Network and search for baked potato recipes. They have more recipes you might like for twice baked potatoes!
try making a taco topped potato. make your taco meat and put that on your sliced potato and top with sour cream, shredded cheese, jalapenos, tomatoes, whatever you like on a spicy taco...
i don't know exactly what your'e asking but i'll give you mine
1 potato baking size poke with fork all over and put in microwave for starting at 5 minutes then check with fork keep cooking till fork tender in 3-4 minute increments then cut in half length wise but not all the way through add your toppings i use butter,sour cream,cheese whiz broccoli if i have it and bacon bits but you can use your own ideas for your taste

wash, pierce%26amp;bake in a preheated 450 oven for 1hr.(no foil, this makes for a crispy skin). top w/ butter, worcestershire, salt, pepper, and cayenne. top w/ shredded cheddar %26amp; nuke on high for 1 min.
