2 1/4 cups powdered sugar
1 jar (12 ounces) smooth peanut butter
PREPARATION:
Grease a 10x15x1-inch jelly roll pan; line with waxed paper and lightly butter the waxed paper. Placed mashed potatoes in a mixing bowl. powdered sugar, about 1 cup at a time, beating well after each addition. Add more or less, just until very thick but spreadable. Spread mixture into prepared pan. Chill for 20 minutes; spread peanut butter over potato layer. Roll as for a jelly roll. Cut into 1/2-inch slices. Store in tightly covered container in the refrigerator.

Directions:
Boil the potatoes in their jackets, pull off the skins and mash straight away. Add the egg, butter, flour and herbs (if using) and mix well. Season with plenty of salt and pepper, adding a few drops of creamy milk if the mixture is too stiff. Shape into a 1'; round and then cut into eight pieces. Dip in seasoned flour. Fry in bacon fat or melted butter on a gentle heat.
Cook the bread until crusty and golden on one side, then flip over and cook on the other side (about 4-5 minutes on each side).
Serve on its own on hot plates with a blob of butter melting on top.

鈥?4Granny Smith apples, peeled, cored, and sliced
鈥?2 tablespoons butter
鈥?1/2 cup firmly packed brown sugar
Directions:
This old-fashioned cake was sometimes called ';Pratie Apple,'; and some recipes have it cooked on a griddle. This, however, calls for traditional oven baking and is delicious served straight from the oven with a cup of tea.
Preheat oven to 425掳F. Lightly grease an 8-inch pie plate.
Cook the potatoes in boiling salted water until tender, 12 to 15 minutes. Drain and mash. Add butter, sugar, and ginger and mix well. Stir in the flour to make a soft dough. On a lightly floured board, form the dough into a ball and divide in half. Roll half into a 8-inch-diameter circle and fit into the prepared pie plate. Arrange the apple slices by overlapping them in 2 concentric circles over the dough. Moisten the edges with cold water.
Roll out the remaining dough into an 8-inch circle and place it on top of the apples. Press the edges together and flute them to make a standing edge. With a sharp knife, make 4 or 5 slits on top to allow steam to escape. Bake until crust is browned, 25 to 30 minutes.
Remove from oven and cut a 2-inch circle in the top pastry to make a lid. Remove this carefully, add the butter and brown sugar, and replace the lid. Return to the oven and continue to bake until the butter and sugar have melted, about 5 minutes. Slice and serve immediately, with whipped cream, or a dusting of confectioners' sugar, if you like.

Directions:
Potatoes and cabbage are the heart of colcannon, the traditional Irish potato dish. This torte, which adds bacon as well, can stand alone as a one-dish meal or be served alongside corned beef.
Preheat oven to 400 degrees. Butter a 9-inch quiche pan or pie plate.
In a pot of boiling water, blanch the cabbage for 2 minutes. Drain and refresh in cold water. Pat dry. In a large skillet over medium heat, melt the butter. Add the bacon and cook until browned, about 5 minutes. With a slotted spoon, remove the bacon and toss with the cabbage. Add the potato slices to the skillet and toss to coat in the bacon drippings. Place one-third of the potatoes in the bottom of the prepared pan. Sprinkle with salt and pepper and half the cheese. Top with half the bacon and cabbage mixture, salt and pepper, then repeat with one-third of the potatoes, remaining cheese, bacon and cabbage, salt and pepper, and end with a layer of potatoes. Anyway, here's a simple, easy %26amp; tasty potato recipe for courtesy of this English person:
Ingredients
2oz / 50g red lentils
4floz / 115ml water
1 small onion, chopped
1tbsp vegetable margarine
2oz / 50g mushrooms, sliced
1陆tbsp wholemeal flour
1tbsp tomato pur茅e
录pint / 140ml soya milk
陆tsp basil
black pepper
陆lb / 225g potatoes, cooked and sliced
2oz / 50g vegetarian cheddar
1. Cook the lentils in the water until they are tender and the water absorbed.
2. Fry the onions in the margarine in a pan for a few minutes.
3. Add the mushrooms and saut茅 for a further few minutes.
4. Add the flour and tomato pur茅e and stir well.
Slowly add the milk, stirring constantly to avoid lumps.
When it is boiling and thickened stir in the basil and pepper.
5. Stir the lentils into the sauce.
6. Pour the sauce into an ovenproof dish, cover with the potatoes then the cheese and cook at 400掳C/200掳C/gas mark 6 for 20 minutes.

It is simple use a fresh baked potato and mash it with a fork or a spoon. It may sound odd but i like it.
another way I eat baked potatoes is to eat them like a hot dog it's odd but i like it.

* 3 tablespoons butter
* 1 medium onion, finely chopped
* 2 cups of cabbage, shredded
* 1 1/2 lb potatoes, peeled and cut them into chunks
* Salt and pepper, to taste
- In large saucepan, cover potatoes with lightly salted water. Cover and bring to boil; reduce heat and boil gently for 10 minutes or until soft. Mash until very smooth.
- In large saucepan, boil cabbage with small amount of water until tender. Drain, set aside.
- In large nonstick frypan heat butter over medium-low heat and saute onion just until softened (about 5 minutes). Sitr in drained cabbage and cook for 3 minutes. Add potatoes, folding to mix well. Add salt and pepper, to taste.
- Leave on medium-low heat and listen to it until it bubbles and squeaks in the pan.

2 cups chopped cabbage
1 large onion, chopped
1 tablespoon butter or stick margarine

Place potatoes in a large saucepan or Dutch oven; cover with water. Bring to a boil. Cover and cook over medium heat for 8-10 minutes or until potatoes are almost tender. Add cabbage and onion.
