Ok...here are my pan ';Home Fries';.

Cut up a couple of onions.

Slice up like 4-5 red potatos (use less potato's if you have Idaho Russett brown potatoes). Make sure you scrub the potatos to get all the sand off of them, but don't remove the skins. Also if the slices are too big, cut the slice in half to make half moons.

Put about 1/2 a stick of butter with a little oil in the pan, then add onions. Cook until they start to get translucent, or see through. Put a little salt and pepper on them.

Next, add the sliced potatoes, and some more salt. Make sure you mix them around so each potato gets some fat on them.

Let them sit on Medium-high heat for 10-15 minutes. If they start to burn or crisp, simply add water.

After 10-15 minutes, cover the pan, and check them every so often for doneness. When the potatoes flake or start to get mushy, they are done!!!!

The onions usually end up a little crispy and sweet.

take potato......take hammer.......repeatedly release hammer down upon potato......throw in microwave( inside a bowl preferred to reduce the already massive mess) heat to desired heat whether cold or hot......pour in salt pepper garlic cheese and chives....presto......mashed cheesy garlic potatoes...........................

p.s.......you can use onion too
My 12 yr olds fave food ever is baked potatoes. He makes them in the microwave until they can be gently squeezed. (Thats how he knows they're done) and then he puts butter and sour cream on them. You said you didnt want to use the oven so I dont know how youre going to put them on a pan with onions and some oil unless you cook them in the microwave and them put them in the toaster oven to add crisp. Good Luck sweetie!
Twice-Baked 'Taters: scrub 1 big potato for each 2 people [maybe a whole one for dad if he's a big eater!]. Keep the potato wet on the outside, poke a few holes in it with a knife-tip. Wrap in waxed paper and microwave each potato about 7 minutes. Let cool down so you can handle it. Next comes the fun part:

Cut each potato in half and carefully scoop out the insides, leaving the peel as a little boat. Mash the potatoes in a bowl with salt, pepper, parsley flakes, butter or marge, a little sour cream [or whipped cream cheese] and some garlic bits or garlic powder. Mix well, then stuff each potato 'boat' with this mixture. You can do this EARLY and then when you're ready to serve, put the boats on a microwave plate, cover with waxed paper, and re-heat for 2 minutes when you're ready to serve.

Toppings can include: more sour cream with some chopped green onions as garnish...bacon bits...parmesan or yellow cheese sprinkles.

These are really tasty with any kind of meat, meat-loaf, sausage patties or links, weiners, leftover chicken or whatever else is snoozing around the house. Don't forget to eat the 'boat' potato shell...that's the Very Best Part!
Here you go, hopefully you have a grater and know how to use it, but ya know? If you don't just dice the taters up really small, add them in to some heated oil (be careful, not on high and stay at the stove at all times) I like to add a bit of garlic salt and pepper right to my oil, add in your taters and onions and if you don't want to use the egg and do all that, just add you stuff to the oil and cook until the taters are tender. Scoop out onto papertowels and enjoy.
