I have my own little tater soup concoction would like others.Lov soup and do not hav many recipes for it. I really want - need a good potatoe soup one.?
Potato Bisque or potato soup





2 1/2 cups diced potatoes


1/2 cup chopped onions


parsley 2 sprigs chopped


2 celery tops


salt 1 1/2 teaspoons


water 2 1/2 cups


butter 1 1/2 tablespoons


milk 3 cups


1 egg slightly beaten


salt and pepper to taste





combine: potatoes, onion, parsley, celery tops, salt and water in saucepan; bring to boil and cook gently until potatoes are tender.


Drain, saving liquid. Press potatoes through sieve and add to liquid.


Make a white sauce of the butter, flour and milk, add to potato mixture.


serve this as a soup with rolls or crackers.


(chopped raw onion and paprika optional)





or for the bisque:


just before serving, combine slightly beaten egg with soup and add topping of grated cheese, chopped parsley, or dash of paprika


to each bowl.

Cook 2-3 slices of bacon, diced, until crisp.


Add 2 tbsp of flour to the fat to make a roux.


Whisk in 1 cup of milk %26amp; 1 cup of chicken or vegetable stock.


Take 3-4 boiled potatoes, mash roughly, or use potato flakes.


Stir into liquid when simmering, whisk or blender smoothly.


Serve hot, sprinkled with chopped green onion %26amp; grated cheddar.
My mom makes the absolute best potato soup ever!! And its so simple!





Potatoes


Evaporated Milk (add water)


Celery


Cubed ham





And thats it! Its so yummy!



Mine:





4 large potatoes, peeled and chunked, then boiled in water for about 20 mins or until fork tender. Drain and add:





2 cans chicken stock


1 can water


2 cups Heavy Cream


2 cloves garlic, chopped


Salt/Pepper


1 tsp. garlic powder





Then, I use a hand-blender (or regular blender would work) to briefly blend whole mixture together. I leave some chunks for the most part make it all smooth. I add 1 more can of water or chicken stock if it is too thick.





Then, I add in 3-4 stalks of chopped green onion and bring to a boil. I reduce to low and let cook while I:





Brown italian sausage, crumbled.





I add that to the soup and stir.





Serve with a dollop of sour cream on top!

4 CUP POTATOS DICED SMALL


I MEDIUM CARROT DICED SMALL


2 STICK CELERY DICED SMALL


3-4 STRIPS BACON CRISP AND CRUMBLED


1/4 STICK BUTTER


I CLOVE CRUSHED GARLIC


1 SMALL ONION CHOPPED


COVER ALL WITH WATER IN MEDIUM POT AND SIMMER UNTIL POTATOS ARE TENDER DO NOT DRAIN!! ADD FLOUR TO BRING LIQUID TO CREAM CONSISTENCY.


ADD 1/4-1/2 TSP SWEET BASIL.


SALT %26amp; PEPPER TO TASTE


SOUP CAN BE STORED IN FRIDGE AT THIS POINT BUT DOESN'T FREEZE WELL JUST BEFORE SERVING ADD A SMALL CONTAINER OF 1/2 %26amp; 1/2. BRING BACK UP TO TEMP. DO NOT BOIL!



both of these are good potato soup recipes. One small addition would be to render some bacon to saute' the onion and garlic, just another layer of flavor that really works.
