Good potatoe recipes? ?

My husband brought home a bunch of potatoes and I don't have any good ways of cooking them besides baked, mashed and fried which is getting old! Any suggestions? Thanks a lot!Good potatoe recipes? ?

Ingredients (serves 4)


1 tablespoon butter


1 tablespoon oil


3 large Sebago potatoes, peeled, thinly sliced


1 1/2 cups grated tasty cheese


Method


Heat butter and oil in a 26cm (base) non-stick frying pan over medium-high heat. Once sizzling, remove pan from heat. Arrange half the potatoes, overlapping slightly, over entire surface of frying pan. Repeat to form 2 layers.


Sprinkle potatoes with cheese, and salt and pepper. Return frying pan to stovetop over low heat. Cover with a lid or foil. Cook for 15 to 20 minutes or until potatoes are tender.


Remove lid. Cook for a further 10 minutes. Invert onto a serving plate. Cut into wedges. Serve.

Better than Grandma鈥檚 Mashed Potatoes





3 pounds baking potatoes, peeled


2陆 quarts chicken broth


4 small carrots, scraped and cut


into 陆-inch pieces (I think 2 is plenty)


1 small onion, chopped


录 cup butter or margarine


1 teaspoon dried dill weed


1陆 cups sour cream (I think 1 cup is plenty)


3 tablespoons chopped fresh parsley


1 teaspoon salt


录 teaspoon pepper


1 tablespoon butter or margarine











Combine potatoes and chicken broth in a Dutch oven; bring to a boil. Reduce heat, and simmer 15 minutes. (I skip that part %26amp; either microwave or bake the potatoes whole鈥hen use a potato ricer to mash鈥aves peeling.) Add carrot and onion (now I use just one small 14 oz. can of chicken broth, because it is only the carrots and onion in the pot), and simmer 20 minutes or until tender; drain.





Combine cooked vegetables, 录 cup butter, and dill weed in a large bowl; mash (I use the food processor for the carrots %26amp; onions %26amp; then just mix everything together). Add sour cream and next 3 ingredients, stirring well. Spoon potato mixture into a greased 11x7x1陆-inch baking dish; dot with 1 tablespoon butter. Cover and back at 325藲 for 1 hour.





Yield: 8 servings.



Cut the potatoes into very thin slices, like potato chips, and then cut the slices in half so they make a 'D' shape. Place them in a bowl, and drizzle 2-4 tablespoons of melted butter (more, if you have more potatoes in the bowl) over them. Add parsley, salt, pepper, minced onions, and whatever other spices you happen to have in your spice cupboard (the nice thing about this recipe is that it tastes different every time you do it!)





Wrap up the potatoes in aluminum foil, then wrap it up a second and then a third time. Place them on the grill for 30 minutes (this is a good dish to have with some sort of grilled meat), flipping every 4-5 minutes. When they're done, take them off, put them in a bowl, and enjoy!

HERB-ROASTED NEW POTATOES


Yield: 6 Servings





1 lb 14 oz small red potatoes,


.unpeeled (or russets)


1/4 c Chopped fresh basil or 1 tsp


.dried basil


1 tb Chopped fresh oregano or 1


.tsp dried


1 tb Olive oil


1/2 ts Salt


1/4 ts Black pepper


2 1/4 oz Grated parmesan cheese





1. Preheat oven to 425F. Cut the potatoes into 6-8 wedges each.





2. In a large bowl, combine the basil, oregano,oil,salt and pepper.


Add the potatoes and toss to combine.





3. Place the potatoes on a nonstick baking sheet and sprinkle with


parmesan cheese.





4. Bake for 20-25 minutes of until tender and golden brown.





VARIATION: Instead of red potatoes, use small Yukon Gold or Finnish


Yellow potatoes, both of which have yellow flesh. Substitute 2 t.


chopped dried rosemary for the basil and oregano.



Sherrie's Cinnamon Potatoes





8 potatoes, cubed


1/2 red onion, diced


5 celery speers, diced


2 red apples, chopped


1 cup, Pinot Gregio (white wine)


1 cup, water


1 Tbs, black pepper


1 Tbs, cinnamon


1/4 cup, flour





In a lg. stewpot combine water, wine, cinnamon %26amp; pepper


Bring to a boil, add flour


Simmer to make a smooth gravy


Add potatoes, onions, apples %26amp; celery


Cover %26amp; simmer 1 hr.; stirring occasionally





Serves: 8

PAULA DEEN'S RED POTATO SALAD! (:





12 cups cubed red potatoes


1 cup chopped green bell pepper (about 1 medium)


1/2 cup minced red onion


1/2 cup extra-virgin olive oil


1/3 cup red wine vinegar


2 tablespoons Dijon mustard


2 tablespoons mayonnaise


1 1/2 teaspoons salt


1/2 teaspoon ground black pepper





Cook potatoes, covered in boiling water, 10 minutes, or until tender; drain well and cool.





In a large bowl, combine potatoes, bell pepper and onion.





In a small bowl, whisk together remaining ingredients. Pour over potato mixture, tossing gently to coat. Cover and refrigerate.
I'll tell you my secret recipe!





Tke a potato and boil it up, cut or un cut doesnt matter, Mash it into paste when its done and put it in a pot with milk and butter, let it boil or a minute and add in red pasta sause mix. After its done put it in a bowl and put mozzerlla cheese on top of it and put it in the microwave till its done - a minute or so- make french fries with another potato and use the potatopaste that you jut made as dipping sause for the fries! YUMYUM! MY favorite il go mke it right now cause im starving

cook some minced beef,cook some carrots%26amp; onion


cook potatoes and mash them when cooked


put the cooked mince,onions and carrots into a oven proof dish %26amp; top with the mashed potatoes and put in oven for about 20Min's


serve with veg
roast them(which is my fav way) or make homemade chips !
