Sweet Potato Pie





1 pound sweet potato


1/2 cup butter softened


1 cup white sugar


1/2 cup milk


2 eggs


1/2 teaspoon ground nutmeg


1/2 teaspoon ground cinnamon


1 teaspoon vanilla extract


1 (9 inch) unbaked pie crust





Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.


Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.


Bake at 350 degrees for 55 to 60 minutes or until knife inserted in center comes out clean.Recipes for making sweet potatoe pies?

Sweet potato pie





Pastry


2 cups flour (250g0


1 tablespoon custard powder


1 tablespoon icing sugar


175g butter


1-2 tablespoons water


1 teaspoon lemon juice


Note; You could cheat and use a bought sweet short crust pie flan.





Filling


500g sweet potatoes, cooked and mashed


1 cup milk 9250ml)


2 eggs, beaten


1/2 cup brown sugar (85g)


1 teaspoon melted butter


1 teaspoon cinnamon


1/2 teaspoon nutmeg





Pastry


To make the pastry sift flours custard powder and icing sugar into a bowl. Using finger tips mix in butter until mixture resemble fine breadcrumbs. Using a knife cut in water and lemon juice to make a firm dough and add more water if necessary.


Turn out on to a floured board, knead lightly and roll pastry out to the size of a 20cm pie dish. Carefully lift pastry into greased pie dish and refrigerate until required.





Filling


To make filling combine all filling ingredients and beat until smooth. Spoon into the pie shell. When pouring hold a large spoon over the centre and allow filling to 'spill' over the spoon into the shell. This prevents pastry being weakened in the centre.


Bake at 180 Celsius (350 Fahrenheit) for 1/2 hour or until set. Serve with ice cream or whipped cream.





Serves 6





Variations;


For filling replace milk with 300ml cream or sour cream.


or


Add 2 apples, peeled, cored, cooked and mashed into potatoes.

Introduction


I once served a slice of this pie to a friend who claimed to hate sweet potatoes. He said it was the best ';pumpkin'; pie he had ever eaten.He was so surprised when I told him it was sweet potato pie! The difference in the two pies is subtle but evident, and this recipe is delicious. It's my own recipe and I hope you enjoy it!


Ingredients








1 recipe all_butter pie crust





Filling:


1 1/4 cups firmly packed brown sugar


4 medium sweet potatoes (1 1/2 cups)


1 tsp ground cinnamon


1/2 teaspoon salt


1/2 teaspoon ground ginger


1/4 teaspoon ground nutmeg


1 Tbsp vanilla_extract


1 cup evaporated milk


3 Tbsps melted butter


3 large eggs





Brandied Whipped Cream


1 cup heavy whipping_cream


1/2 cup powdered_sugar


2 Tsps vanilla_extract


3 Tbsps brandy











Directions


Step: 1





Prepare pie crust as directed in recipe and line a 9 inch pie plate. Blind (pre bake) bake the shell for 8-10 minutes before adding the filling.





Filling: Scrub sweet potatoes and place in a large pot of boiling water, cook until very tender. Move the cooked potatoes to a mixing bowl, let cool a bit and then peel and mash with a potato masher or an electric mixer.Add butter and spices to mashed sweet potato and mix well.In a seperate bowl beat eggs and add condensed milk and brown sugar and vanilla extract.Combine egg mixture with potato mixture and mix well using a wire wisk or electric mixer.


Pour filling into crust. Bake for 50 to 60 minutes or until knife inserted in center comes out clean. Cool pie completely.


Garnish slices of pie with brandied whipped cream if desired. Refrigerate pie when cooled.








For the whipped cream:Pour whipping cream into a glass or metal bowl and chill along with the beaters until very cold. Attach beaters to mixer and whip cream until light peaks form. Add powdered sugar, vanilla and brandy, continue beating until desired stiffness.


Pipe rosettes around edge of pie or serve dollops on each slice.

This a a recipie from Dave Lieberman on Food Network that I think is pretty good:





2 sweet potatoes, about 10 ounces each


1 3/4 cups fine graham cracker crumbs (about 15 whole crackers, finely ground)


1/4 cup dark brown sugar


8 tablespoons unsalted butter (1 stick), melted


2 large eggs


1/2 cup plus 1 tablespoon dark brown sugar


1/2 cup heavy cream


3 tablespoons all-purpose flour


1 teaspoon ground cinnamon


1/2 teaspoon ground nutmeg


1/2 teaspoon vanilla extract








Preheat the oven to 350 degrees F.


Wrap the sweet potatoes tightly in 2 layers of aluminum foil and roast them in the oven until very soft, about 1 hour and 15 to 20 minutes. Remove from the oven and allow to cool.





In a bowl, stir the graham cracker crumbs and brown sugar until well combined. Add the butter and mix until the crumbs are evenly moistened. Press firmly and evenly on the bottom and sides of a 9-inch pie plate to create a crust, being sure there are no cracks. Bake in the oven for 10 minutes or until golden. Remove from the oven.





Meanwhile, make the filling: Unwrap the potatoes and peel them. Put the flesh into a bowl and mash well with a fork. Add the eggs, 1/2 cup brown sugar, cream, flour, cinnamon, nutmeg, and vanilla and whip until very smooth with a whisk. Pour the filling into the partially baked crust. Sprinkle about 1 tablespoon brown sugar over top and bake in the center of the oven until set, about 40 minutes.





Allow the pie to cool completely before cutting. Serve at room temperature.
