POTATO AND LEEK SOUP
2 lbs. Russet potatoes
1 lb. leeks, washed and chopped
1 onion, chopped
1 celery stalk, chopped
1 carrot, chopped
5 cups chicken stock or broth
1/2 cup milk
4 tablespoons butter
2 tablespoons chopped flat leaf parsley
salt and pepper
6 tablespoons cream or half-and-half
1/2 cup shredded cheddar cheese or chives
Melt the butter over medium heat in a large saucepan. Add the potatoes, leeks, onion, celery, carrot; cover, and cook for 5-7 minutes, stirring frequently.
Add the chicken stock or broth, 1/2 cup milk, salt and pepper. reduce heat to low, cover, and cook until the vegetables are tender and potatoes are soft.
Mash the potatos and vegetables in the pot or transfer to a blender or food processor in batches and process until smooth. make sure the soup has cooled for 15 minutes before putting it into a food processor.
When ready to serve, reheat the soup, serve in bowls and swirl 1 tablespoon half-and-half into each serving. Sprinkle with chives or shredded cheddar cheese.
BOMBAY POTATOES
3 large potatoes
2 tablespoons brown mustard seeds
2 1/2 tablespoons cooking oil
1 1/2 chili powder
1 teaspoon turmeric powder
salt to taste

Peel the potatoes and dice into bite sized pieces. fill a deep pan with water and boil the potatoes with a pinch of salt until they have cooked throughout.
When the potatoes are done rinse under cold water, making sure the potatoes do not break.
In a non-stick frying pan, heat up the oil. Once the oil is hot, (not so hot that a blue haze appears), add the mustard seeds and cover with a lid.
Lower the gas to the medium setting. The seeds will soon start to pop; lower the heat and add the chili and turmeric power and stir. Ensure the powder mixture and seeds do not burn!
Add the potatoes to the pungent oil and stir slowly for a minute until the potatoes are covered in the seeds and they turn a light yellow due to the turmeric.
Remove from the heat and garnish with coriander.
Note: It is recommended that a minute before removing the potatoes from the heat, the heat should be turned up and the potatoes allowed to become crispy; this adds more flavor.What are some great potatoe recipes?
Cheddar Cheese Mashed Potatoes
Mashed potato recipe is made with mashed potatoes, cheddar cheese, American cheese, and other seasonings.
INGREDIENTS:
4 large baking potatoes, about 2 pounds, peeled and cut into 1-inch pieces
1 cup heated milk
2 tablespoons butter, room temperature
4 ounces shredded process American cheese
4 ounces shredded sharp Cheddar cheese
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1/4 teaspoon paprika
pinch ground red pepper
PREPARATION:
Cook potatoes in boiling water until tender, about 15 minutes. Drain well.
Put potatoes back in saucepan; stir over low heat until dry, about 2 minutes. Remove from heat. Mash, adding about 1/2 cup milk and the 2 tablespoons butter
Add grated cheese and seasonings. Beat with a spoon, adding remaining milk until desired consistency is reached.

INGREDIENTS:
6 or more medium lg. potatoes
Oil or fat for deep frying

PREPARATION:
Wash and peel the potatoes. Slice very thin.
An old fashioned cabbage slicer can be used (careful of the fingers) - or use a sharp knife or food processor with a thin slicing blade.
Put the slices at once into a bowl of cold water and let stand for at least one hour
Ice water is best, but you can set the whole bowl in the refrigerator if you wish. Dry well by shaking them in a towel.
Fry in hot oil at 390 degrees F. until a light golden brown. Don't try frying too many at once, better to put one layer on the frying basket. Drain on paper towels or any kind of plain crumpled absorbent paper.
If you haven't any paper, use a worn dish towel. Salt lightly. These can be kept for some time if they are sealed into plastic bags or containers after they have cooled.

1/3 cup mayonnaise, regular or reduced fat
1/3 cup sour cream, reduced fat
1/4 cup milk

1 slice (approximately 10 to 12 ounces) smoked turkey or ham (deli will cut in one piece)

Easy Herb Roasted Potatoes
Feel free to use your own favorite dried or fresh herbs to flavor these tasty potatoes.
INGREDIENTS:
1 1/2 pounds red or Yukon gold potatoes, peeled, cut into wedges
1 tablespoon melted butter
1 tablespoon vegetable oil
2 teaspoons dried parsley flakes or 2 tablespoons fresh chopped parsley
1/2 teaspoon dried dillweed
1/2 teaspoon dried rosemary, crumbled
1/2 teaspoon onion powder, optional
1/4 teaspoon garlic powder, optional
salt and pepper
PREPARATION:
Line a baking sheet with foil; grease the foil lightly. Heat oven to 375掳.
Combine potatoes, butter, oil, parsley, dill, rosemary, and onion and garlic powders in a large food storage bag. Mix in the bag until potato wedges are thoroughly coated.
Arrange potatoes in the prepared baking pan in a single layer. Sprinkle with salt and pepper. Bake for 45 to 55 minutes, or until potatoes are tender and nicely browned.
