I had a really good recipe for it but I cant seem to find it.Does anyone have a recipe for sweet potatoe coffee cake?
Sweet Potatoe Coffee Cake
2 large sweet potatoes
2 large eggs - lightly beaten
1 and 1/2 cup milk - room temperature
1 cup corn meal
1 cup flour
2 Tablespoons honey
2 Tablespoons melted butter
1 teaspoon baking powder
1 teaspoon salt
Boil the sweet potatoes (with skins) for about 50 minutes or until just tender when stabbed with a fork. Allow potatoes to cool several minutes.
Preheat oven to 375 degrees. Prepare an 8x8 baking dish with a light coating of cooking spray.
Cut potatoes in half length-wise. Scoop potato out of skins with a teaspoon and place in a bowl. Set aside. Discard skins.
In a medium bowl, sift together the flour, corn meal, baking powder and salt.
In a seperate bowl, mix eggs, milk honey and butter.
Add wet ingredients to dry ingredients and stir. Fold in potatoes (don't worry if the pototoes are clumpy as long as the pieces (scoops) are small.
Pour batter into prepared baking pan. Cook for 50 minutes or until a tooth pick inserted in the center comes out clean.

Sweet Potato-Caramel Twist Coffee Cake
Three different sweets create the yummy goodness in these twists: brown sugar, corn syrup and sweet potatoes.
1/3 cup butter or margarine
1/2 cup packed brown sugar
1/4 cup corn syrup
1/2 cup chopped pecans
2 1/2 cups Original Bisquick庐 mix
2/3 cup mashed vacuum-pack sweet potatoes
1/3 cup milk
2 tablespoons butter or margarine, softened
3 tablespoons packed brown sugar
1 . Heat oven to 400潞F. Melt 1/3 cup butter in ungreased square pan, 9x9x2 inches, in oven. Stir in 1/2 cup brown sugar and the corn syrup. Sprinkle with pecans.
2 . Mix Bisquick mix, sweet potatoes and milk until dough forms a ball. Turn dough onto surface dusted with Bisquick mix. Knead lightly 10 times. Roll or pat into 12-inch square. Spread 2 tablespoons butter over dough. Sprinkle 3 tablespoons brown sugar over butter. Fold dough into thirds; press edges together to seal. Cut crosswise into twelve 1-inch strips. Twist ends of each strip in opposite directions. Arrange twists on pecans in pan.
3 . Bake 25 to 30 minutes or until golden brown. Immediately turn upside down onto heatproof serving plate; leave pan over coffee cake 1 minute. Serve warm.
