Sweet Potatoe Recipe?

I am looking for a new recipe for sweet potatoes. Im tired of sweet potatoe casserole (although it is delicious!) and i dont wanna do a plain sweet potatoe with brown sugar, butter, and cinnamon.





I was thinking maybe some sort of recipe where i cut up the sweet potatoe and sauteed it with stuff or something? I do still want it to be sweet.

Garlic-Herb Roasted Sweet Potatoes





2 lbs sweet potatoes, peeled


1/2 cup Hellmann's mayonnaise


1/2-1 tablespoon roasted garlic and herb seasoning


3 tablespoons fresh parsley, chopped





Cut potatoes into 1 to 1 1/2 inch-thick pieces, or wedges if desired.


Stir together mayonnaise and seasoning in a large bowl; add potatoes, tossing to coat.


Place potatoes in a single layer in a lightly greased broiler pan.


Bake at 450F for 40 to 45 minutes or until potatoes are tender and browned, stirring after 20 minutes.


Transfer to a serving dish, and sprinkle with parsley.


CHIPOTLE-SPICED ROASTED SWEET POTATOES:.


Substitute 1 Tbs. salt-free chipotle seasoning blend and 1/2 teaspoons salt for roasted garlic-and-herb seasoning and 3 Tbs. chopped fresh cilantro for parsley. Proceed with recipe as directed.

Mom's Safe Sweet Potato Souffle





Souffle


6 sweet potatoes


1 cup Splenda granular


1/2 cup skim milk


1/2 cup butter, melted


1 teaspoon vanilla extract


2 eggs, beaten


1/2 teaspoon salt


Topping


1 cup Splenda brown sugar blend


1/3 cup rice flour


1/3 cup butter, melted


1 cup pecans, chopped





In a large stockpot, cover the sweet potatoes (with the skins on) with 1'; of water; boil for 20 minutes, or until fork tender. Drain, allow to cool, and remove the skins.


Preheat oven to 350. Grease a 2 quart casserole dish.


Place the potatoes in a mixing bowl, and beat until smooth.


Reduce speed to low, and add Splenda, milk, butter, vanilla, eggs, and salt.


Allow any potato ';fibers'; to remain on the beater and remove. Pour the sweet potato mixture into the casserole dish.


Prepare the topping in a small bowl by whisking together the brown sugar Splenda, rice flour, butter, and pecans. Sprinkle the mixture over the potatoes and bake for 40 minutes or until bubbly.

Grilled Sweet Potatos


INGREDIENTS


2 pounds sweet potatoes, peeled and cut into wedges


3 tablespoons reduced-sodium soy sauce


2 tablespoons sherry or apple juice


2 tablespoons honey


2 tablespoons water


1 garlic clove, minced


1 tablespoon sesame or canola oil





DIRECTIONS


Place sweet potatoes in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 5-7 minutes. Place potatoes in a large bowl. In another bowl, combine the soy sauce, sherry or juice, honey, water and garlic; pour over potatoes and toss gently.


Drain sweet potatoes, reserving soy sauce mixture. Arrange sweet potatoes in a single layer in a grill basket coated with nonstick cooking spray. Brush potatoes with oil. Grill, covered, over medium heat for 8-10 minutes or until tender, basting with reserved soy sauce mixture and turning occasionally.





my personal favorite is to get a rosemary shrubs you know bunch of rosemaries still in there stems and take a little bit of melted butter and pund a couple of garlic and drop in the butter and dip the rosamry in and the flavr oh-so-yummy and when u are grilling it u can baste it and the flavor gets so good.i swer ull love it

My favorite way to eat sweet potatoes is to simply bake them in the oven like an Idaho potato and serve with a little lemon pepper. Dh has to have butter on his.





Yam and apple Skillet


1 large yam


2 large apples peeled and cored.


3 Tablespoons of butter.


2 T. brown sugar


Dash of cinnamon (Optional)


Dash of nutmeg or ginger(Optional)


Salt to taste





Nuke a large sweet potato for 3 to 5 minutes. You want it just cooked through--not mushy. Peel it. Half it lengthwise and make thin half rounds.





Peel and quarter two large apples. (Granny Smith or other cooking apple). Slice the apple quarters into 3 or four pieces.





Saute apples and sweet potato in butter. Add sugar and spices. Cook until desired tenderness is reached. Salt to taste and serve. Great with ham or pork roast.





Note* I sometimes add raisins to this. A 1/2 cup pineapple titbits also works well.
Twice Baked Sweet Potatoes





INGREDIENTS


6 sweet potatoes


2 tablespoons salad oil


1 (8 ounce) package cream cheese, softened


1/3 cup brown sugar


2 tablespoons margarine


1 tablespoon vanilla extract


3/4 teaspoon salt


1/2 teaspoon pepper


1/3 cup chopped walnuts





DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


Rub sweet potato skins with salad oil. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour, or until soft.


Meanwhile, in a large bowl combine cream cheese, brown sugar, margarine, vanilla, salt and pepper.


Cut potatoes in half and scoop flesh into the bowl with the other ingredients. Mix well and fold in walnuts. Spoon mixture into potato skins.


Bake for 5 minutes, or until heated through.
First of all try ';YAMS'; instead of sweet potatoes!








These are my mom's recipie's


(can be prepared a day ahead)


usually 2 large yams


will feed 4-5 people


buy fresh firm yams ones with smooth


skins and deep color and no imperfections


wrap them in foil and bake one hour at 325


let them cool and peel them


then cut into 3- 4in wedges


put them in a shallow covered


skillet add about 1/2 stick butter


and about 1 cup brown sugar


or u can use (pancake syrup as varaition)


add a pinch of salt too


combine after sugar has disolved let the


yams simmer till cooked tender add water


if needed





or you can mash them with a fork after cooked if you like them mashed?





or just slice them plain into rounds then brown in oil both sides till tender with a bit of salt without sugars or syrup
how about fried sweet potatoes?
